MY FAVORITE ROASTED VEGETABLE RECIPE:
ROASTED BUTTERNUT SQUASH WITH BABY KALE AND CRANBERRIES

3 20 OZ. PACKAGES OF PRE-CUT BUTTERNUT SQUASH
2 LARGE RED ONIONS, PEELED AND CUT INTO 1 INCH CHUNKS
6 OZ BABY KALE
1 CUP DRIED CRANBERRIES
1/4 CUP. BASTING OIL ( i USE WEGMAN'S) OR1/4 CUP OLIVE OIL WITH A FEW SHAKES OF DRIED
BASIL AND GARLIC POWDER
SALT AND PEPPER TO TASTE
PREHEAT OVEN TO 450 DEGREES.. TOSS SQUASH AND ONIONS WITH BASTING OIL AND SALT AND PEPPER. PLACE ON BAKING SHEET IN A SINGLE LAYER AND ROAST FOR APPROX 30 MINUTES . REMOVE FROM OVEN, STIR, AND RETURN TO OVEN FOR ADITIONAL 10 -15 MINUTES. REMOVE FROM OVEN AND ADD CRANBERRIES AND BABY KALE. MIX UNTIL KALE BEGINS TO WILT. SERVE AND ENJOY!
